Mango-Lime Cream


~Mango-Lime Cream~

                        

           Makes about 4 cups              

 

1.5# Cream Cheese

½ cup sifted powdered sugar

Juice of 2 limes,plus zest of one

4 Cups fresh or frozen mango chunks

 

Puree Mango chunks in blender or food processor until very smooth. You may need to add some water to help puree.

Whip cream cheese with mixer fitted with a whip or paddle attachment until very soft and smooth. Mix in powdered sugar and blend thoroughly. Add citrus juice and mix well. Slowly add mango puree to incorporate well. Adjust sugar and citrus juice as necessary. Served chilled with fresh fruit to dip.

With fresh apricots, strawberries, cherries and raspberries starting to show up at the Farmer's market, try this cool, creamy & delicious dip for fresh fruit. Perfect for summer picnics and parties.
